Prepare the Donuts:

  1. Preheat your oven to 350°F (175°C) and grease a donut pan.
  2. In a large mixing bowl, combine 1 1/2 cups of all-purpose flour, 1/2 cup of granulated sugar, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1/2 teaspoon of salt, and 1 tablespoon of finely chopped fresh thyme leaves. Mix well.
  3. In another bowl, whisk together 1/2 cup of whole milk, 1/4 cup of melted unsalted butter, 2 large eggs, 1/4 cup of fresh lemon juice, 1 tablespoon of lemon zest, and 1 teaspoon of vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Spoon the batter into the prepared donut pan, filling each cavity about 3/4 full.
